Granola Making Time!

So this week I’ve been busy but also not active, other than soccer on Monday and I think by now people know how that ended. I read on my friend Heidi’s blog about this granola she’s been making, using applesauce. I love granola and I love applesauce so I thought I would give it a go. The recipe was easy to follow and make.

So here is my first batch – I changed the recipe slightly based on what I had in the house.

Applesauce Granola

3 ½ cups rolled oats
½ cup coconut flakes, unsweetened
¼ cup flax seeds
¼ cup sunflower seeds
½ cup sliced almonds
1 tsp ground cinnamon (used a cinnamon shaker my mum made me and did 3 shakes)
¼ cup brown sugar (loosely packed)
¾ cup applesauce, not chunky
2 tbsp maple syrup (used the maple syrup made by Awazibi - the BEST!)
2 tbsp honey
1 tsp vanilla extract (I used a little more – I love vanilla!)

1. Preheat the oven to 350°F. Line a rimmed baking sheet with aluminum foil.
2. In a large bowl combine oats, coconut, seeds and spices.
3. In a medium bowl, whisk together sugar, applesauce, maple syrup, honey and vanilla.
4. Pour wet ingredients into dry ingredients and stir to combine. Spread on prepared baking sheet(s) in an even layer.
5. Bake for 20 to 30 minutes (depending on the depth of goldenness you’re looking for), stirring every 10 to 15 minutes.
6. Break granola up as desired and store in an airtight container.

You could also add dried fruit like raisins etc…

I’ve been really happy with the results and I think I will be able to make at least 3 batches of homemade granola with the supplies I bought so it’s also affordable. I didn’t add any salt and I tried to keep in low in sugar so I think it’s probably pretty healthy as well.

    Yeah, it’s delicious! :o ) If I do say so myself! I used protein powder in my milk and then had that on the oatmeal…figure it’s a good way to get some extra protein.
